We finally decided to go with a Crema Marfil for counters in our bath remodel...
My husband liked the subtle toning vs more busy granite and it goes with floors and tile we picked.
The woman at The Granite Place said that with sealers as good as they are that the acidic water in our area (Nokomis) would not be problem...
We would only use it on the knee wall top and the shower curb...

We found a checkered-type-accent tile w/natural stone--thassos, Crema, and light emperador--of course that would be sealed as well.

So is that likely to be a problem down the line?
Woman at Granite Place said that you choose 5-10-15 yr sealer in deciding how often you need to reseal

Just my opinion, but I think sealed marble in your bathroom is fine. People shy away from marble in kitchens, due to it being a softer stone, but even in that situation marble is usable. Marble steps have lasted thousands of years in Rome, I think people under estimate it. Most vanity tops that you see in Home Depot and Lowes are marble, and people slap them in and never seal it and have no problems.

We looked at the dreamy marfil Quartz and it just looks plastic to us

There are no easily-applied marble sealers that prevent etching. None. Some offer stain protection. There are light cure and polyester coatings that will prevent etching, but the light is $2,000.00 and I'd have to cure a heck of a lot of tops to get a return on my investment. The polyester is about $75.00 per square foot.
