I thought I'd try some yeast risen pancakes since I have lots of hard cider dregs (white mulberry- goose berry and the yeast that came with it).... Using the dregs or starter it went something like this:
1-1/2 cups milk
1/2 cup dregs
1/2-3/4 cup fruit puree(service berry. I don't tend to like dry cake like pancakes and always add fruit puree)
2 cups flour
salt
few 3-4, TBS of sugar
refrigerated overnight
Sort of a step towards sour dough in pancakes. Don't overwork and take out the air though.
I decided to try English muffins , essentially a peasant food since it was bread made without ovens. Its pan bread. I made these over a fire on some cast iron.
3 cups flour
1 teaspoon salt
2 table spoon of sugar
1/2 cup milk
1/2 cup cider dregs( still semi dry and live or dilute with a little fresh juice)
2 table spoons of melted butter
Give it plenty of time to rise. What's the hurry? I got around to it in a few hours. I rolled it out to about an inch and a half thick and cut into circles. I left it to rise again and covered with a towel. One could use a wide glass or cup. Coat with corn meal and pan fry on each side until it browns a bit. Not bad considering how much they want for yeast.
So no need to heat up an oven or any need to buy ridiculously priced yeast.
