My kid is so picky when it comes to clothing. He does not wear it if the material is not comfortable. What fabric should I choose when buying clothing for kids?

Cotton.
I suggest you look at Primary.com. My granddaughter does like scratchy clothes either.

Whatever's dictated by the conditions.

Sweaters: wool.
Sport shirts, polo shirts, T shirts: cotton or cotton blend
Pants: wool, polyester blends, cotton
Underwear: cotton usually with some poly in for stretch

Take your child shopping with you when you go for clothes. And stop using laundry products with fragrance or softeners or dryer sheets. They all leave a residue on clothes that can be irritating.

We went all cotton and as already suggested do very careful research on the laundry products you use. Often they are more of a factor than the material itself. Oddly enough, my young ones like the cheap Gildan T-shirts; the ones your find at the arts/crafts stores intended to be used for T-shirt printing/decoration projects. I started wearing Gildan as well. I think it comes to about $4 a t-shirt (the version without the tag).

I just got a nightgown that is Supima cotton and it is unbelievably soft and smooth. From Lands End.

Cotton is great but unless you're going to very carefully not over-dry their clothes you'll get shrinkage...and kids NEVER shrink! Cotton with 25% - 50% poly is a good blend of comfort and utility.

My son had a sensory disorder which thankfully went away in his teens. All of his pants and shorts had to have an elastic waist. Absolutely no denim unless it had been washed about 100 times. I occasionally found some in thrift and consignment stores. Long sleeved T-shirts couldn't have cuffs. Button plackets were iffy. Fabric content wasn't as important as how it felt to him. You'll either have to take him shopping or be prepared to return the rejects.
