Many years ago when I was a kid, when they showed a person jumping, from the side view it seemed the skis were parallel to the jumpers body.

Now when I watch the ads for the upcoming Olympics, they look like the skis are still about a 30 degree angle to the jumper.

Has there been a change to the accepted technique?

more surface area for resistance

I've long thought that running in place and flapping one's arms like Wile E. Coyote would work even better

Yes, they changed the technique over 20 years ago. The new one is called V-style.
