My wife and I are spending the better part of a week there the week before Memorial Day. We love Galveston and my dad was BOI (he worked for the Maceos at the Turf Club, which ought to place him date-wise), so it's not like it's totally unfamiliar territory, but I know things change (and all my relatives who lived there moved away or passed away). We're more Shrimp 'n Stuff and Stingaree than Gaido's, to give you an idea of our tastes. All suggestions welcomed!

I'd try Casey's, which is right next to Gaido's and actually they share the same kitchen--it's just more casual. Yummy.

Mosquito Cafe, Sunflower Bakery, The Original Mexican Restaurant, Benno's, oh gosh, there's just really, really good food down there.

Sounds like you're more into casual seafood. Maybe Casey's, Joe's Crab Shack, Willie G's, or up the coast at Clifton's Diner or TxCty's The Reef. Stingaree is back in business, on Bolivar (you know).
