Dallas I would say, but realistically I would live in either in a heartbeat over where I am now.

True but Melbourne can get summer high temps ranging from 15C to 46C approximately

In Melbourne it can be 40C today and 18C the next day. That's comparable to Dallas being 20C today and -2C the next day! So Melbourne has to be a winner here...

Dallas, in extreme cases, can be 22C today and 6C tomorrow. But rarely it will be, say, 25C one day and 3C the next (has that even happened?). Sure, if it's 25C in a winter day, it can go down to 3C in like, what, five fays? Great daily sudden temps rarely happen in the world, but Melbourne seems more susceptible (on a daily basis).

Oh, it's highly noticeable when temperature drops from scorching hot to cool. Whereas a temp drop from 22C (mild) to 7C (cold) isn't that oblivious.

I'm tempted to say Melbourne, but much of the US east of the Rockies is also prone to occasionally wild day to day temperature swings, including coastal locations. For example, just the other day, New York went from about +13C to around -15C in under 24 hours.

This can be calculated with standard deviation and/or kurtosis.
