Union Star Cheese
This is going to be by far your best bet. I've never in my life while living in Wisconsin (~26 years) found better cheese than that made at Union Star. The factory tour is really good and a learning experience. At the end of the tour you get to sample a fresh out of the vat cheese curd, if you haven't ever been on cloud 9, prepare to do so. It's by far the most delicious thing I've ever tasted in my life.
