The raw meat we buy is from a top notch butcher and it is a top grade cut of meat that is ground up.

When I was a kid I remember people eating this and it is basically the same thing. I never heard it referred to anything but Steak Tartare until I moved to WI and they called it a Cannibal Sandwich.

STEAK TARTARE: is a meat dish made from raw ground (minced) beef[1][2]. It is usually served with onions, capers, pepper, Worcestershire sauce, and other seasonings, often presented to the diner separately, to be added for taste. It is often served with a raw egg yolk on top of the dish.

I didn't hear about it either until about a year ago. But there do seem to be plenty of people that have tried it if you ask around.

Personally, I think it is gross and a risk I don't want to take.

Mmm, I love Steak Tartare. I don't have it very often, and the idea starts to bug me when I overthink it, but it's a great treat. Lake Park Bistro in Milwaukee had a delicious version on their menu before the pandemic hit.

Another similar raw beef dish is Kitfo, an Ethiopian preparation that includes minced raw beef, herbed butter, and warm spices. The restaurant Alem in downtown Milwaukee has it on the weekends, and it is fantastic.

My dad used to eat that at Christmas. I've had it, and its pretty good. But, knowing what I know now, I'd never do it. I'm not even a steak fan. But I love a slow cooked roast. So tender it falls apart and delish.

While, I never liked it, it was pretty common at parties when I was a child (in central Wisconsin). But, it wasn't called Cannibal Sandwiches or Steak Tartare. I don't remember what it was called.

What was it called in your area?

Wildcat....never had it, never will. I don't think it's a big thing, as I've never been anywhere it was served.

I've never of it by this name... but you might have heard of it by its more common German name, hackepeter. But "cannibal sandwich" will draw a lot more clicks than "hackepeter."
