$50,000 in Knoxville is equivalent to $73,500 in LA Long Beach area.

Those pure COL calculators don't tell the whole story. The northern parts of LA can be very expensive and traffic is a nightmare, so you want to live as close as you can afford. The available housing stock is much better than the Bay area, but their are also a lot of seedy areas that you have to watch out for. My company use to have an office about five miles for Woodland Hills, and I worked with several people out of that office. They generally hated it because of the cost. The plus is you are close to Malibu and Santa Monica.

What's the long term goal? Can you parlay the CA job to another higher paying job? Being broke sucks.

The San Fernando Valley suburbia is much more doable on $50k than SF for sure.

You won't be living high on the hog (talking roommates, probably) but the experience and potential work (and network) opportunities are awesome out here.
Can you stand to live like a college student (or a small step above) for another 2-3 years?
Me too. I'm 56 now and at 18 I dreamed of California and UCLA. I didn't do it and I have always regretted that. I wish I had followed my heart. Maybe I would have loved it, maybe I would have hated it, but either way it would have been an adventure.

My loan payments kick in around June if i don't defer( 40k). Would it be wise to jump at this opportunity and pass up others jobs in state? I'm being considered for another job in state that pays 45k and am meeting a recruiter for another job locally. My mom is kind of against me going that far away as opposed to somewhere on the east coast, but I'll probably still go if i know I won't struggle in CA. I don't really have family there so i want to make sure I will be stable.
Do not do it, 45k in TN is much more than 50k in San Fran. Use cost of living calculators:

Cost of Living comparison calculator

If you make 45k in Nashville, you'd have to make 79k in San Fran to have the same standard of living. NOT worth it.

Actually I think that is off a bit, nothing is cheap in San Francisco.
You are probably right that the cost of living calculators are off. The take-home pay would be the biggest difference.

Somebody making $27k would pay nearly no income taxes, only FICA. At $50k in CA, he's putting at least 10% for federal and CA state income tax.
