So, I was recently generally under honorable conditions discharged from the U.S Army. I am still fairly young (22)-- I decided to go to college to get a Bachelors in Finance, I initially was going for Economics but after much research I saw that Finance is more employable, is this true? What are some of the careers I could be doing?
Yes, Finance grads are pretty employable. Same with accountants. Every business needs people who understand the numbers, no matter what kind of business it is.

You should not have a hard time finding a job with any kind of business degree. If economics is more interesting to you then finance, I would go for it.

Honestly- most of the people i've worked with don't do what their major is in. It's a stepping stone, a way to get your foot in the door.
But business or finance is an excellent choice - very transferable.
Type of jobs is up to you; you'll need to get something entry level. Banking, Investments, Management..
