It's fun, but this guy really knows the ins and outs of every technique do's and don'ts.
I agree, Alton Brown is very knowledgable and very informative. When I had cable, I watched his "Good Eats" show all the time. He does not always have the best recipes, but he definitely knows his ingredients and the science of cooking.

Greater risk from store bought, there's mad cow/etc., and you have no control over how store bought was processed. With a deer or such I can know it was done right to eliminate the risks...

Rules are different, I would suspect, in Alaska from those here in N. Carolina. Cherry picking is frowned upon here, you can gut the animal in the field, skin it also, this will feed opossums, raccoons, foxes, coyotes and various types of insect life and buzzards, but, to leave edible meat on the carcass (within reason of course, it is virtually impossible to get all the meat off of the bones), but, if you only take the tenderloins and leave the rest, if caught, you will forever lose your right to hunt, personally, I think flogging should be a part of the punishment as well. Four of us hunt together, we normally get enough meat for each of us to pack off about 150 lbs. We also feed six hispanic families, enough meat to feed them for almost a year, N.C. has a lot of deer and the amount we are allowed is 2 deer per day, gender not important, for the entire 43 huntable days of hunting season (we can not hunt on Sunday because all game animals are by law,--Baptist. And you can not shoot a baptist on Sunday.) Yeah, sounds strange to me too, and I have been abiding by these laws for a long, long time. I bought my lifetime hunting and fishing licence over 22 years ago.

Huh? Can't shoot a bible thumper on a Sunday? WTH? Are they legal to shoot on the other days?

From what I have read here, I wouldn't think much about seeing someone with a mesh bag with animal parts in it. Seems like it's common enough practice. Thanks for the answers on that.

What remains suspect is the animals that were killed near here with just the backstraps taken out and that same idjit coming from that direction. That was five minutes from my house, as I have said. If I knew the person to be a law abiding citizen it would just be considered a coincidence and perhaps it was just that. I told the local cop and that's about all I can do.
