I use the bones to make stock or demi-glace. Other than the head, antlers, hooves, and some internal organs (I do keep the heart, kidneys, and liver), I use everything on a moose or caribou.

Do you have cooking classes that you teach. I need something to do this winter and I love cooking. I wouldn't mind learning from you.

One thing that should be said is it's best not to do that with the bones from deer where CWD has been found. Actually it's best not to even cut through a bone in that situation. http://www.uwex.edu/CES/ag/issues/fm..._CWD110402.doc
