i was chatting with an alternative provider and i was told that my acid reflux and nausea/panic issues would subside if i gave up caffeine entirely

does anyone know some good herbal stimulant alternatives to caffeine?

Yerba Mate and Garana are the most common alternatives but they just contain lower amounts of caffeine. Many plants that have a simulative effect are used in cooking. You may have to concoct a tea made up of several plants like, ginseng, ginger, anise, and various types of mint. Some of the mints and chamomile can settle your stomach and a little basil might work as well.

George Washington Carver made a coffee substitute by roasting equal parts; peanuts, wheat or rye and cow peas. I have tasted it and it has the nutty flavor of a coffee but I am not sure if it has the kick. Wheat is probably the ingredient most likely to increase dopamine particularly if the germ is left in it. Herbs that are used for depression could be added like St. Johns wort.

Contrary to some popular belief, mint especially peppermint and spearmint can be trigger for GERD. I believe ginseng, ginger, anise (licorice), chamomile and basil can all be helpful. Do some reading and proceed with caution.
