You are right that randomly adding one food or supplement is rarely potent enough to counteract other questionable food/drink one is consuming. Whole diet changes may be required. Fermented foods, like Kefir, typically are more nutrient dense than the foods were in their original state, which is the reason they are good for you. Most people can probably benefit from adding fermented foods in the diet.
The challenge might be to find fermented foods you can tolerate. It's great if there are some you actually like. I am basically limited to dark chocolate (must be at least 70% cocoa - the higher the percentage, the better). List of fermented foods
