I live near a town with a lot of Ecuadorians and I would love to try their food. What should I try? I like seafood, and am okay with just about any meat as well as carbs. Also there is an Ecuadorian bakery in that town. What Ecuadorian treat should I try? Thanks in advance.

Try an "Encebollado" . Fish soup made with either Tuna or Albacore and served with plantain chips, bread or pop corn (canguil). Also, I suggest a Ceviche Mixto (mixed Ceviche), made with shrimp, fish and conch. If you are dining in an Ecuadorian restaurant and drink beer, don't forget to ask for a "biela" (ecuaspeak for: bien helada - real cold). Buen provecho.

Probably, but modified Ecuadorian style.

True. The "Chifas" incorporated a lot of Ecuadorian condiments.
