I have been wanting to try Kyrgyz cuisine and other Central Asian cuisines as well. So what is Kyrgyz food like. I also hear that mutton is big in Kyrgyzstan.

Horse meat is very popular. Traditional dish is a stew of horsemeat chunks and onions, with dumplings dipped in it, eaten with fingers. It's actually delicious, even if cooked very simply. Since selling horsemeat is one of the zillions of things that is illegal in the Land of the Free, Americans will need to substitute some other kind of meat officially approved by the politburo.
