I went to Egypt ,arranged by Smithsonian ,those who know better took antibiotics before they started the tour,we were warned not to eat their fresh salad,and drink OJ if they come from a can,and do not eat fruit with skin on,or tomato ,cucumber with skin,not to drink tap water,even brush your teeth with bottled water and we are staying in 4 star hotels.
I did not take the same precaution and came back with bacterial infection,
also we went into the desert and stopped by a roadside cafe,bought coca cola in bottle from those old fashion freezer,were told to drink with straw and the straw must be sealed in clear paper.
Several people in the group got sick,but locals dont seem to have any problem

The Chinese banquet usually starts with 4 cold appetizers,there is this sea jello which is marinated with soysauce and seasame oil,which is not a fresh vegetable.cold boiled chicken,slices of beef from beef shank,1000 years egg,none of them is fresh vegetables.
It is true some eat raw scallions,didnt one of the restauarnts got into trouble with their raw scallions,or is it cilantro?
Some Burmese eat raw garlic.

I bet you Indian restaurants in India do not serve raw vegetables,I have never seen an Indian eating raw veggies,

Actually tomatoes came from the Americas.
Also your comment about being careful while touring foreign countries doesn't apply to locals. They're used to whatever is in their waters so they could eat raw vegetables washed in local waters if they wanted to. It also doesn't explain why salads aren't really a thing in more sanitary places like Japan or Korea.

Japan and Korea may be sanitary now,but not in old days,back then there is no antibiotics.
A sushi chef has to go thru many years of training,starting from how to make rice,it takes experience to examine the fish and filet them.
There must be good reasons why they dont eat raw food,people dont take bath everyday either,nor do they change their clothes daily,Roman soldiers are giving a bottle of vinegar and a stick,no toilet paper.
Americans are so spoiled,they take a shower every day,and they change clothese every day,because they have washer and dryer, a/c.heating,they dont eat the claw,web,intestines,brain,but do they know they are all ground and turn into patty.
But there is something ordinary folks in other countries have where some in US household do not have-$400 savings.

Some Chinese when they first came here and saw those toss salad,they refer them as Rabbit food,because they see rabbit eating bits and pieces of lettuce,radish,.
Lettuce has no nutritional value.

The Cantonese for sure eat a lot more cooked veggies than raw. Many don't eat raw veggies at all. Some even cook lettuce and other vegetables Westerners often eat raw. The water has something to do with the age old customs. Down in Guangdong, even if you visit Starbucks, the water they use to make your drink has most likely been boiled. Still, other nearby customs such as the Vietnamese do apply raw and fresh ingredients at times so it's not just a southern thing.

Europe wasn't sanitary until late 19th century and salads had been around longer than that.
Southeast Asia does have a traditional of eating raw vegetables and their agricultural practices aren't that different.
This is all a matter of preference and culture in my opinion. Just like Europeans tend to use sweet potatoes as a savory ingredient while Asians use them in sweets. There's no right or wrong just different.

I do think that from an environmental point of view the practice of eating cold lunches should be promoted in Asia. There shouldn't be a need to turn on the stove or oven for every meal.

Tomato is not "foreign melon". There are two commonly used names, 番茄 and 西红柿. Although both names suggest foreign origin, there is no melon in it. 茄 means eggplant and 柿 means persimmon.

People in most parts of China don't eat sea jello often. There are no standard 4 cold appetizers at all. Such a concept doesn't exist nationwide.

Chinese people in all regions eat a lot of raw cucumbers. Other vegetables may depend.

Patently false. 100g of Romaine Lettuce for example has 175% of the suggested USDA of Vitamin A and 40% of Vitamin C.
