I know that during the 1940's where the population of Hong Kong was around 750k about 1.4 Million migrants from Shanghai descended onto Hong Kong to escape the communist. Does this mean that good chunk of the people in Hong Kong today are from Shanghai?

it doesn't matter. Most Shanghainese were from elsewhere in China anyway, a lot from nearby Jiangsu and Zhejiang Province. And Shanghai was a part of Jiangsu Province until late 1920s.

People from Shanghai and nearby provinces who speak Wu dialects are a significant minority in Hong Kong. There are many famous people in Hong Kong with ancestral homes from Shanghai or Wu speaking areas of Eastern China in addition to Guangdong and Minnan area in Fujian. Influences from pre-communist Shanghai is significant in fashion and hairstyling in the second half of the 20th century. There are also many Shanghainese cuisine restaurants. Shanghainese conversation can be heard sometimes spoken by old immigrants. Cantonese culture still dominates in Hong Kong as Guangdong is HK's neigbour and largest source of immigrants.
