In Guangzhou or Shenzen, it's possible... I wouldn't go as far as to say that it's in high demand, but there is plenty of export to Arabic nations, and these are the cities where the most manufacturing and shipping goes out of. There is a Middle Eastern community here in Guangzhou, as well.

Not totally sure what the salaries could be... a lot of them are probably based on commissions. From what I've heard in passing, and don't hold me on this, I could imagine something like 10,000 RMB (716,000 dram or $1500 USD) per month, give or take. If you are here for a couple years, make a good reputation for yourself, and can get more contracted gigs, then I guess you could make more, maybe 15k. If you get involved in trade yourself, then you can make considerably more.
Rent on a 2-bedroom apartment in a nice area like Liede or Zhujiang New Town in Guangzhou (the international-heavy CBD) will run between 4500-7000 RMB; studios and 1-bedrooms aren't common around here, and if you find them, they are usually luxury places that will start around 6k/mo. My wife and I have a nice, newer, Western-style 75 sq/m 3 bedroom apartment in the CBD for 5900 RMB/mo but that's mostly because she's Chinese. If I got it alone, it would have been at least 1k more.
If you were to get an apartment a little further out, in the Haizhu or Yuexiu districts, you'd save a lot of money - you'd pay closer to maybe $2500/3000. There is a Middle Eastern community centered in Taojin and Xiaobei, in Yuexiu district. It's not hard to find roommates here after a few weeks of getting out into the nightlife and meeting people.
I am not a Muslim and I do not know the details. Most of the Arabic schools are private and located in relatively remote places. Big cities have universities or schools offering Arabic, but I guess they have higher bars.
