Have you checked out Central Market? It's owned by HEB but the meat is much higher quality (and more expensive

Maurice Allen used to have a gourmet market and full meat counter on Far West. He is now the lead butcher at Central Market and could no doubt cut anything you want.

CM would be my first choice also but there's also a small family owned butcher shop in the quaint shopping center at 38th and Jefferson.
