I am a single mom thinking very seriously of relocating to Austin from Philadelphia. I have a 3 1/2 year old boy and will be renting a small house (pref) or an apartment.
I am a Whole Foods fan and would like to be reasonably near one of them.
In addition, I really enjoy walking and bike riding---are there many bike trails and safe places to walk?
Rents, according to what I've seen on Craigslist, don't seem to be too bad.
I'm an artist and like a diverse neighborhood that doesn't force me into a car every time I need something.
I would appreciate any suggestions/comments....

Sounds like you need to be downtown or in Travis Heights or the Zilker area, and even Hyde Park. You'd be close to parks and Whole Foods, as well as near some of the few remaining "weird" folks. I'd recommend East Austin, but you have a kid, and I'm not sure if you'd want him in public schools in East Austin. Of course, you could go private and solve that problem.
