Hello everyone,

I've heard that pork ribs is a northern thing, while I've heard that southerners like their beef ribs.

So tell me...What do Texans prefer?

Well, Dee, THIS Southerner(Carolinas and Georgia) only had beef ribs once in the 30+ years I lived in the Southeast but loved me some pork ribs many, many times.(actually, pulled pork was my favorite way to eat it). My concerns that I would be 'stuck' with beef ribs here in TX were relieved early after my arrival! Don't get me wrong...I can force down a beef rib or two if necessary! BUT...bring on the pork and sweet tea!

I must say that I didn't understand brisket until I moved out here...comes in a close second to pork for me; now that I've tasted some of the fine offerings here in CenTex! Dang...that salmon we're having for dinner is somehow less appetizing about now! Yummo! on either pork or beef ribs!!

I absolutely LOVE Beef ribs. I didn't have a pork rib until about 7 years ago when I was first dating my husband. They're not bad, but I definitely prefer beef ribs... but I don't have any friends who eat beef ribs, so I think you're dealing with myth.

Brisket! it is all about the brisket. I could care less about ribs!

And there is some fine smoked turkey out there and sausage. Ribs aren't even on my radar.

This native Texan will only eat pork babyback ribs--and that's only if I or a family member fixes them.

I have NEVER had good ribs of any kind at a restaurant--ever.

Pork ribs. Beef's acceptable (but much preferable as brisket, not ribs). Absolute favorite is a brisket and pork ribs plate! (Native Texan, and NOT a Southerner - that's different, so if you want to know whether Southerners, instead of Texans, prefer pork or beef ribs, you might want to put this in a Southern forum.)

I love them both! The best place to get beef ribs is County Line. We've been trying to perfect them at home but haven't come close to CL's. Pork ribs are much easier to cook and we cook up all styles of pork ribs on the smoker/grill.

Texas is about the beef. The southeast, GA, NC, etc. love the pork. Don't get me wrong; bacon and sausage are great as far as pork goes, and ribs are okay. But Texas is about the beef, and like someone mentioned, it's more about the brisket than ribs.

This is beef rib country... :-) I have yet to go to a place that makes decent pulled pork here so I have to search for pork shoulders every once in a while to make proper pulled pork on a smoker. Pulled pork is supposed to be cooked slow on a smoker for at least 15 hours not in a crock pot..... but then again, I'm partial to east north Carolina style pulled pork and vaunted vinegar sauce. yum.....
