Because sports cars look so much better and more pleasant aesthetically, than your average, run-of-the-mill Honda or Toyota!

But one thing I have always wondered is speedometers that go up to 160-180mph and the car tops out at 110-130mph
If they stopped at 55mph or 70mph, you'd never know if you are going too fast. It also puts the safe numbers in the top middle range where they are easy to see rather then being pegged down at the bottom right.

It's the same answer for both.....Because you can.
I love performance driving, but public roads are not the place.
Most modern sports cars can corner at 2x the recommended speed.
Going round corners fast is pretty boring unless you're into the tires slip angles. And unless it's a hairpin turn, you really shouldn't be doing that on public roads. Not to mention you really need a wide road to drive like that anyway.
Sure you can do a track day or two, but how many guys can afford to write off their $100-200K supercar? How many can actually afford to RACE that car (lapping gets boring after a while)?
It's funny, but even though I can afford a super car, I will never own one. There's no value there if you're all about the performance driving. Instead I bought a pickup and a dirtbike. ~70hp and 230lb's and geared to do a top speed of 80mph. Do the math there on the power to weight ratio. Even with a rider, it's super car class power to weigh ratio, except it's geared to do 80, not 200. Endless trails with no speed limits.
America may not have the autobahn, but unlike Europe, we have millions of acres of national forest and BLM land to ride our OHV's.
To annoy random people on internet forums who think they know what is best for me better than I do.
