Is there a big difference in power, acceleration and experience between a 4cyl and 6cyl Camry or Accord from the last ten years? How much more powerful are the 4cyl Accords and Camry's from the last ten years vs those from the early 1990s?
Our 08 Accord EX 4 banger was reasonably quick. I think it was geared for a quick jump off the line to make it feel punchy for a 4 banger instead of lathargic. It was no modern V6.
All engines are very significantly more powerful and efficient, compared to the early 90's. Really, there is no comparison.
The V6's are significantly faster and more relaxed in their operation. That said, I think the 4cyl can manage just fine if you're ok with the limited power and aren't looking to pass briskly. My wife drives a four cylinder Ford Fusion and in terms of power, it meets a bare minimum. It's slow and requires a lot more throttle input than my V8 Hyundai Genesis but it works just fine for commuting and keeping up with traffic.

It's still a roughly 40-60HP gap (Camry/Accord respectively), and just as importantly, and roughly 40-55 lb-ft difference (Accord/Camry respectively) in torque. A 10-year-old V6 Accord/Camry will still have noticeably more grunt than their modern 4-cylinder contemporaries.
I have to admit the 4cyl engines are pretty good these days.
Back in 1990's, you stomp on the gas pedal with the AC on in a passing situation and the 4cyl will just cry for help and not really do anything. I just remember back then, my dad would have nothing to do with a 4 or a 6 for that matter. For him, it was a 8 or nothing.

I went from a 2008 4cyl Altima to a Maxima, and while the Maxima feels MUCH more powerful, I'll be going back to a 4cyl soon, as it was more than adequately powerful, and for their purpose, there really is no need to have a near-300hp monster under the hood. If I want that, I'll jump into Infiniti and co.
Car and Driver had the Honda Accord sedan 6cyl with automatic at 5.6 seconds 0-60. They had the 4cyl with manual transmission at 6.6 seconds and the 4cyl with CVT at 7.4 seconds.
Back in the 80's a stock Mustang 5.0 did 0-60 in something like 6.5 seconds and we thought that was fast.
So while the 6cyl is clearly more powerful, the 4cyl has really come a long way and makes decent power with the fuel savings advantage as a bonus. In real life driving, I don't think you'll have a problem with a 4cyl Honda.
Would people still buy a midsize if it came with a smaller V6 that offers little more than 200HP, lighter weight, and better fuel economy?
