Evaporation, nope. Leak or theft, yes. Modern cars are supposed to have a sealed tank system, and in many, driving with a loose or missing cap (or any equivalent opening that would allow that much evaporation) will make the car throw an emissions code.

I've had cans of gas that were not tightly sealed lose no significant volume over many months to a year. In a very hot summer climate.

2009 Honda CRV.
No sign of a leak under the car.

We put some gas in the tank, but the gas light on the dash is still flashing. The car...um, not sure of the technical terms...sounds normal when I turn the key, but it doesn't start.

Argh. Any suggestions?

Some of these "theories" are a lot of trouble just to get a tank of gas.

I am not positive you are 'out of gas'. Sounds like it, but maybe not.
Your CR-V should run with a gallon of gas in it. And not only that, but even if it DID have a little leak of some sort it would still run.
So....

Buy yourself some car starting fluid. It comes in a spray can, like WD 40. Spray it into the air intake and try to start the car. It it roars to life and then dies you have checked out the ignition system. One way or the other, you are out of gas - or at least the engine isn't getting any.


Try it and let us know....

Gas does evaporate. Not as fast as alcohol or other fluids but it will evaporate given enough time as long as there is a vent. It’s not going to fully evaporate from inside of a gas tank in a month.

Someone picked your lock or drilled a hole in your tank. 1/4 tank of fuel is a minimum of 2-4 gallons depending on vehicle. It’s not gonna evaporate that fast
