For Tesla's, it does track your charging history (last 12 months?). Not just when you "fill up". But every time you're plugged in. As long as you put in your utility charges, you can also track your costs (Supercharger costs are pulled when you actually use them).
There are also 3rd party apps that will give you more reporting capability. I've used TeslaFi and Tessie that gives you various data points about your trips, destination, efficiency, etc.
I'm sure all EV's have similar reporting capabilities. i just can't speak to them as I don't own them.

A simple subpoena for your bank records would reveal every single gas fill up unless you’re using cash. All of there conspiracies surrounding EV’s are bunk. Have a newish gas car with some for of internet connectivity? A 12 year old could kill it.

To say nothing of your cell phone records (which they often do subpoena as well.)
Well, you do have to pay to charge, so there will be a tracked transaction. Same as buying gas unless you pay cash for gas (you can't pay cash to charge an EV that I'm aware of).
But.... who cares? Unless you're on a flip phone, you're being tracked. Eh, even if just a flip phone you're still trackable.
What gives anyone the right to track me every time I want to put 20 bucks of gas in my car? Why will we be forced to NOT be able to pay cash to recharge a car? Its 100% my business is it not?
