in general, the best convertible cars were made that way, so I would first decide between a true roadster and a convertable coupe.
then decide if you just want some grunt or if you want something to carve up the corners or if you want to try to get both (limited by budget, of course)
if you want a roadster, look into the Honda S2000. i have one and it's a real joy. a cherry used AP2 can be had for low 20s.
You're not going to get any convertible with four seats that actually seats four adults comfortably and is still fun to drive, so just concentrate on two seaters. I think the just-discontinued Honda S2000 is still the best convertible sports car you can buy. You can still buy new S2000s for $28k, and there's a ton of great used ones, as they are typically second cars that see limited use.
It has real room for adults, good trunk space if you golf, good storage space with the top up,good power, and a great price. Its bigger and more useful than a Miata and much less expensive than a Porsche Boxster. It has one of the industry's best manual transmissions, Honda reliability, a power top, good seats, HID headlights, and its a blast to drive.
If you really need a "four seater", look at a Porche 911 cabrio with the rear seat option.
You could certainly get a good used Miata for yourself, and maybe a Solara Convertible for the wife, spending like 10K on the Miata and the balance on the Solara.
Otherwise you are pretty much ignoring the best idea put forth so far - a convertible Mustang. You owe it to yourself to go drive one before automatically crossing it off your list.
There is a reason that Ford is not in bankruptcy and has 2 cars in the top 10 "clunker replacement" car group, while GM and Chrysler are floundering...
I'd still go with the E46 M3 as the most enjoyable car to drive, with a better interior than what is offered in any current Mustang. The only reason I'd pick something other than the M3 is if maintenance cost proved to be an issue.

So, is the S2000 the "Big Guy Miata"? Several guys on here have commented that they like the Miata, but it's just too small for them to be comfortable in. Buddy of mine here had that happen - bought a Miata, loved it, but he's long-legged enough that he could not get comfortable in the car.
The Z3/Z4 are also bigger 2-seaters, I have driven the Z3 and it's a decent car, the Z4 I have not sampled.
I'd go with an E46 M3 because all the desirable Jags are still pretty costly. The E46's (2000-2006) are still very attractive, have great handling and decent power (333hp). If you can afford it my first choice would be a 2006+ Jaguar XK which is simply a beautiful car with a dash of Aston design thrown in.
It's definitely nice, I spent some time looking at one a while back but the 2006+ exterior/interior is so much nicer that I'd have to spring for the newer model if I was in the market.

Very true, I certainly wouldn't feel bad about having a previous gen XKR.
