While some places will welcome the tourist and see nothing I can see episodes of Locked Up Abroad about someone playing around with taking forged documents to other places that are more enthusiastic in enforcing lockdowns and quarantines.

Wearing a mask on the plane?
If that is required by the carrier, then either abide by the rules or do not bother to buy a ticket. Same for any private business.
Make such a stink about it after you get in the plane that you are removed? Good- that lands your sorry butt on the no-fly list forever. Then you can drive, bike, walk, or swim wherever you want to travel.
No one is above the rules.
