Yankees Sox rivalry is too hyped up by ESPN and that turns a lot of people off. It obviously is a real rivarly though - with their recent meetings in the playoffs and especially the fact that the Sox have now recently broken through.
Cardinals - Cubs doesnt take a back seat to anyone though. Its the same rivalry without the NY bias.
Rivalries have taken a hit since the realignment - Reds biggest rival used to be the Dodgers but now LA only comes to Cincy one time, if that.
I think the Red Sox/Yankees and Cardinals/Cubs rivalries are the best in their respective leagues. The latter would probably have a more wide-ranging appeal if the two could meet more often in the playoffs, but as we all know, the Cubs don't always hold up their end of the bargain.
Dodgers/Angels is more of a wink wink-nudge nudge rivalry. So many of the fans of both teams are also fans of the other one. That and there's no real LA/OC rivalry to speak of, save for the annoying booster types in Anaheim who don't want to share the name with L.A.
Now Dodgers/Giants... there's your to the bone and last drop of blood rivalry. Same league, So Cal vs Nor Cal, Juan Marichal, and the historical rivalry that dates back to the East Coast... all the components are there for some drama.

Rivalries And Civic Pride
You'll probably hate my answer, but I would venture to say all of them. Yeah, some have more history than others, and the first things on most people's minds when you talk rivalries would be Yankees-Red Sox and Giants-Dodgers, but all of them do carry great stories with them, and the cities that display their civic pride in their teams. The most passionate fans in all of those places will remember great games and memorable plays between the teams, whether they had playoff implications or just good, old-fashioned regular season showdowns that were fun to watch. They all have something.

Cubs vs Cards is another good one
Giants vs Dodgers, I remember hearing a Giant fan shot and killed a Dodger fan some years back. Now thats hardcore.
I know it gets frowned upon because it's interleague, but Cubs/Sox is really nasty. Anyone thats attended one of those games can vouch. It's not just the "classless" Sox fans that get nasty either, it goes both ways.
