My friend and I have been talking about starting a pop culture themed cafe.

We're pretty sure we can't use names like "Jack Sparrow Rum Latte" or use the Batman symbols on our pancakes, etc, because of copyrights. To get around that, we're thinking about using similar names/symbols that are not exact. Like "Captain Jack's Rum Latte" and a general bat on the pancakes, etc.

But we want to decorate the place with posters, figurines, etc of anime/comics/movies. Does anyone know if this is fine? Do we need to have any rights to display stuff like that in a business?

if you bought posters, figurines, etc of anime/comics/movies that have been made for or by the companies that have rights to them, you have the right to display them as you please...

well if you falsely represent yourself as say a disney restaurant, and fill it with disney memorabilia, that is a different story. but if its just art or decoration, it's not a big deal.

OP, if you don't have experience running a restaurant and putting a quality meal on the plate, then all the cute thematic stuff in the world won't save you.
