I'd suggest maybe driving a bit further South, down towards San Diego. Really beautiful coastline down by San Clemente beach (only a very short drive further South from Dana Point) and beyond, and development drops off for a stretch down there.
I agree. The most densely urban stretch of the coast starts south of Malibu and ends at the southern part of OC. South OC has many wonderful, quiet beaches, as do parts of SD county.

But, it would be fun to fly into San Jose, start at Santa Cruz/Capitola for some old fashioned California beach town atmosphere, then do Monterey/Carmel/Pebble Beach, then Big Sur, Hearst Castle, Pismo, SLO, Solvang, and Santa Barbara, all the way to Malibu, then flying back out of LAX.

I agree, go north! LAX & SD will drive you nuts with all the traffic! The beauty is from Santa Barbara all the way up to San Francisco! Stay in Morro Bay or Cayucos...so charming.
