I didn't love being on the road because I have two big dogs and I love gardening and bird watching in the yard. That was my main reason for not making it work, as much as I ADORE Arizona and love traveling. TECH would be an absolute must, the more the better. Would definitely do nomad life only because of current technology. Otherwise, you're very cut off from the outside world and it's very lonely. Some people like that, but most don't. I'm an introvert but I still didn't like the isolation. Tech relieves the isolation.
I have a mobile router from Unlimitedville that I bought outright. The service is expensive, $149/month. About every six months or so the router stops finding cell towers. That is usually because the carrier has discovered someone (me) using unlimited data so they disable that line. Then I have to contact Unlimitedville, they act all surprised about the problem ("What? It happened AGAIN?") and eventually send me another SIM. And we go through the rigamarole again a few months later.
I hate it when I have to travel without access to the Internet. I totally get where you're coming from.
The instapot and Kuerig, sous vide are all things that I do not have my kitchen at home. Now, I bought a dual fuel burner for my ham shack on wheels project. I am looking camping cookware. I am using an old tool chest for storage. As long as I can cook a warm meal, and make coffee. All things that can be done without electricity.
In my main 5th wheel camper I have a generator that I need to take some time and get to running and running reliably. I am also diving more into solar power. It is becoming more viable. The main thing is a decent battery system. Also, inspired by the inverter system on the new F150s I have been working on an idea of a higher currant inverter and system for my pickup. That is a work in progress. Well, the planning and brainstorming stage.

I didn't mention my flatiron. Need good hair to travel.
I am adaptable though. I make my meals at home now, put them in vacuum sealed bags, freeze them, then load up the RV with meals that I can prepare on the stove. Bought a stove top coffee maker.
It's a learning curve. We would like to get solar unit in the future, we are wired for it. I'm just spreading out the costs.
In a year or two, once we figure out what the heck we are doing, I would love to do a multi month trip. Maybe the east coast for fall?
I can see varied type of stops, some quasi dry camping, followed by full hook up for a couple days, then dry camping, rinse, repeat.
There is always so much to buy. Last year we bought inflatable kayaks. This year will be a 10X10 flotation mat for the dog (family had a big one they put out off the boat, and dogs nails chewed it up), and a life vest for dog so I am not constantly keeping an eye on him. Next year, inflatable stand up paddle board.
I'm pretty good having sporadic wifi for now.

I'm interested in learning more about your ham shack on wheels project. My husband is an avid contester.
I bought it off another ham. He started in on it. I changed up several things. I have it more for supporting local events. The end of June we are supporting a 100 mile running endurance race. That will be headquarters.
I have it set up for local frequencies. I also have it set up for HF operations. It has pass throughs for feedlines. You can sit inside and run with two operators. Or setup for outside operations.
I plan to use it for some of the contests. Next winter I will add a stove for heat wintertime operations. I will have stuff for tools and things that need fixing out in the field.
Mikala, ham radio is folks spending plenty of money to play with radios. It is a good hobby for folks who like electronics and science and things like that.

I haven't lived the nomadic life, even temporarily.
But if I did, I'd probably be content with checking email once or twice a day
(or skipping a few days if out in the boonies).
It's so much more than email. I watch a lot of utube videos on how to do this, since I'm still a newbie at 7+ months. I order a lot online, find gadgets to make this easier, read books on my kindle, etc. I wouldn't have even know how to start out without utube.
Before we leave for a trip I down load movies and such from Prime and Netflix. Make sure I have a bunch of books/magazines on my kindle, music on my phone, podcasts downloaded.
And then we never get around to watching anything.
MOST important, I make sure our maps our downloaded in case we lose connectivity. It's happened. Not fun.
I also have a back up paper map book now.
