I think with most cats its just startling. Go spray a human in the face with one and watch what happens...wait..dont do that... ;P

Lots of cats like water but on their own terms. I think it's the sudden nature of being sprayed. I always aimed for the haunches and never in the face. That seems mean. Now all I have to do is show Oscar the bottle and I don't even have to spray him and he will get down. He doesn't scratch furniture anymore but he gets on my desk, messes up my papers, fiddles with my keyboard and mouse and is generally a pest. But usually he is hungry. The little snot insists on being fed every 2+ hours and he is spoiled.
With my old girl it is the compressed air can that she is afraid of. When she gets on my computer desk while I am trying to do something, or up on the kitchen counter where she is not supposed to be, this does the trick. Very rarely is it even necessary to squeeze off a quick puff in her direction. Usually all it takes is merely reaching for the can and shaking it, the sight and sound of it sends her scurrying.
Jasper would love it. I turn on any faucet in the house, he is right there. He wants a drink, or to put his paw in it, and then lick his paw.
I used to have a cat like that! Taz could spend hours in the bath tub watching the faucet drip. I delayed fixing the leaky faucet just for her. She'd also perch on the side of the bath tub when anyone was taking a bath or shower, she'd swat at the water.
There's always Turkish Vans, the "swimming cats."
