First question that comes to mind is if you've never even visited the state, how in the world do you know you want to live here, but that's none of my business. Plenty of fishing and hunting in SC. Public hunting land is generally over-hunted. Several large freshwater reservoirs spread around the state. Saltwater fishing dominates at the coast. If you really need open spaces, concentrate on the upstate. Coastal areas are severely overcrowded and continually getting worse. Past that, there are lots of answers to your question. Only you can decide which one is the right answer. Two suggestions:
1) Rent first and take your time getting familiar with all of SC. We're natives, lived here most of our lives, and vacationed throughout the state. After all of that, when we decided to relocate to the coast, it took us over 3 months of almost full-time looking to pick the right spot. Picking a spot to live is much different than picking a spot to vacation.
2) If you need to work, make sure you have a job before you move. SC's unemployment rate is 3rd highest in the US, with some forecasts projecting 14% by mid-year. Some counties are already above that.
