In Charlotte there are varying levels of Chinese/Asian. There is your normal take out/simple sitdown white box place, your midlevel fusion/sushi Chinese/Japanese and place, a little higher scale independents, and the chains like PF Chang's and Red Bowl. Most of the normal takeout ones are similar. I really like the one near my house in Fort Mill called China East. There are good sushi/Asian fusin places all over, and of the chains I prefer the two I mentioned and I REALLY LIKE the Nakato's near UNCC which is EXTREMELY CLEAN and nice. Thisis their last 3 sanitation grades:

Love MAMA WOK's (Ballantyne area) for take-out. You can eat in too, but the ambience is not anything compared to PF Chang's.

Great Wall Of China, 6666 Carmel Rd, Charlotte, NC 28226 (Ballantyne)

Baoding 4722 Sharon Rd, Charlotte, NC 28210 (South Park)

Tin Tin, 10215 Park Rd, Pineville, NC 28134 - this is a buffet, but it is more "authentic" than any others in Charlotte. Myself and all my Chinese friends like it.

I like Great Wall in Carmel Commons (mentioned above), and Wang & King over on S Tryon/Carowinds Blvd interection.

Best Chinese food I've ever had is in Mooresville - Rice Fun in the Target shopping center.
