Well, I can't speak for stores that are THAT small, but here's some of the more upscale kitchen places

Northwestern Cutlery Supply - Northwestern Cutlery Supply - Fulton Market - Chicago, IL
Williams Sonoma - Williams-Sonoma - Near North Side - Chicago, IL
Sur La Table - Sur La Table - Near North Side - Chicago, IL

And of course, Merchandise Mart for a KITCHEN (worth a read for a few things)

The easy access to professional resturant supply houses on the west side, Chinatown and various suburbs is great. There are places like Don and Krasny & Co. on Clybourn that blow away any consumer oriented cooking store.
