Wilmington is by the water, Huntsville is in a valley surrounded by foothills.. Huntsville is a defense, space and engineering town with a booming economy. Not sure what Wilmington is tourism? I'd imagine similar demographics though Huntsville may be more diverse due to transplants. Huntsville probably has a more populous metro area, especially if you look at the CSA.

Cost of living - Huntsville is cheaper
crime rate - Huntsville is probably higher
amenities - don't know enough about Wilmington's amenities but it probably wins on the fact that it's on the coast. Huntsville has improved dramatically in amenities in the last ten years though as far as retail/entertainment options.
job choices - probably Huntsville, definitely Huntsville if in an Engineering/Tech/Science field, there are many high paying jobs in Huntsville
nice people - i don't know probably a tie
best drivers - if anyplace drives worse than Huntsville drivers I feel for it
craft beer scene - Huntsville has a really large and dynamic craft beer scene
enjoyment of life - I don't know this is really subjective

enjoyment of life - Wilmington, by a hair.
VERY close. But I'd choose Wilmington due to the great beaches in their area. But Huntsville's nice too.
