I won't be using apps, but I notice, I can't do a couple of things for work unless I change it out of S mode. Is it reall necessasry to KEEP it in that mode? It says once you change out of it, you can NEVER return back to it.

It says that Windows 11 in S mode is designed for security and performance, exclusively running apps from the Microsoft Store.

If the things you cannot do are show-stopper type stuff, then it is clearly not the right version for you.

I am not saying it is a bad OS. Every version has its benefits and uses.
Each user has to make a choice based on their needs and budget.

It might be "safer" than regular Windows due to its restrictions for installing non-MS apps but anyone who only installs known, reputable apps would not really be any less safer.

Is Windows S has better performance than normal Windows?
Again, unless their claim is due to the app installation restrictions which indirectly yet naturally allows Windows run a tad leaner and meaner, then, yes but the related performance gain would only really matter to low end/spec machines which Windows S seems to be typically used on or meant for.

IMO, it's more about control and simplification of Windows and hardware, Microsoft's version of Google Chromebook in a sense.
