I would also add Sherman to your list. You’ll find everything you’re looking for, plus it’s an easy weekend ride up from Greenwich. Taxes are also ridiculously low for the area. It’s still technically Fairfield County, but 100% has that Litchfield County vibe. Lots of open space, rolling hills, farms, etc.

That house/grounds is AWESOME! It looks like there is a fence for a horse(s) too.

I am looking at the pictures on Realtor.com and you can see more detail. The smaller pictures on Zillow don't do the house justice.
