I agree, I think something like that would go over pretty well in Cookeville. Of course you'd have the hassle of dealing with under-aged college kids who try to use fake IDs to buy beer, and maybe that's why no one has tried it yet. I personally don't drink but I do enjoy most gastro pubs because the food is usually really, really good. Are you considering opening something like that?

Good friend is a prominent pastor in Cookeville, and he likes it for many reasons mentioned. The college aspect can't be overstated, and because it is a commuter school, it's not really a big party place. I was surprised, in fact, by how few college-based hangouts were adjacent to the school. That said, the vibe works best if you're willing to drive for advanced entertainment (Nashville, Knoxville, Atlanta and beyond) and if you have a family. The non-college younger people I talked to seemed a little misplaced.
