The homeless man was trying to get "money" and was using the "hungry" sign as a front.

I think the fact she walked up to him filming him changes the dynamic of the interaction from the beginning. If someone walks up and offers you food while they are videotaping you it would feel like you’re being set up for something. At the best, it would seem you were being exploited for the sake of social media likes. We don’t know if he would have reacted differently had she not been filming. How would you react if some stranger comes up to you filming you? I’d probably want to end the interaction asap. Especially when there are YouTube videos where people film pranks on homeless like the kid who gave them Oreos with toothpaste in the middle.
It is not a reliable test of the man’s intentions IMO because of the filming.
