I did that when I converted my garage-to-rumpus room back into a garage when I bought my house; the wiring was draped through holes in the floor joists and I had to cut the wires to pull the floor joists out. When I re-wired the garage I did it with conduits. Easier than pulling the existing walls off, re-doing the wiring, and re-hanging drywall.

It's a garage. You could just not put up interior drywall until you are ready for electrical. Then it will be inside the walls just like a normal garage. Finished drywall in a garage is a relatively recent phenomenon.

Yes sir, it's not pretty but it works. The OP could paint over it to help it blend in a little as well.
