Are they going over to Fort Worth at all during their stay? Reata and Lonesome Dove are quintessentially Texan, though not Dallas.

Those would have been my suggestion, too. Reata' rooftop bar is the BEST happy hour spot in Cowtown!

Stampede 66's food is gourmet Texas favorites (chicken fried buffalo steak and mashed potatoes, bacon wrapped meatloaf with to-die-for macaroni and cheese, awesome Waguyu steak tacos) and the decor is comfortably upscale/rustic.
It's the perfect "Texas" dining experience - showing off modern Texan cuisine minus any kitsch.

Just my opinion, but this place is overrated. I have been there three times and the atmosphere is good, but the food is just ok. The meatloaf can be dry, the friend chicken has too much honey, etc. The tacos are good though. Plus, it can be a tad pricey.
In Fort Worth I agree Reata is a very solid choice. I like Hatties in the Bishop Arts district, or Campisis on Mockingbird. (nothing says Dallas like the place the Jack Ruby used to hang out).
