Littleton is a nice, family-oriented, and inexpensive area to live in. I think your family will be fine. Hopefully you don't have any car payments left. And there's always a way to make extra money outside of your main job. There are forums out there that teach you simple ways to make a few thousand (or even more) a year with minimal effort.

My family of four live very simple as well. We rent a modest 2/bd (kids share a room) house, we don't spend extravagantly to keep up with the Jones, we have no car payments and little in CC debt. My wife and I both work and make roughly $130k annually and I can tell you I wouldn't want to try and make it in Denver on just $50k/year. You are looking at getting into huge debt just to stay a float here. Even if we took out our daycare payment we would have to minus a salary and would find it even harder to stay out of debt and still live i.e., drive to mountains, zoo, history museum, occasional dinners, etc..

You may need to secure a PT job on the off hours to bring in a little extra income to help.
