Sorry to hear about your mom. As others have mentioned, maybe the mountain drive isn't the best idea.

The Butterfly Pavilian in Westminster is really nice, and Westminster Promenade is right there too with restaurants, bars, a few shops and movie theater.

You might also consider a can of portable oxygen for your mom to use if needed. I bought a can for my FIL and it helped him tremendously. He could carry it in his pocket and use as needed. (Do some research and discuss with a doctor or pharmacy).

I checked New Belgium's website and they are booked solid for tours this weekend. It looks like there is a slot for tomorrow, but that is it.

New Belgium Brewing - Tour Calendar

It also mentioned that their regular bar will be closed until the 11th.

Something that might be fun is to drive into Idaho Springs. They have a nice little downtown area and there is Tommyknocker Brewery. Great beer, great food and equally great people. Your folks can also enjoy the quaintness of a nice old Colorado mining town. The altitude is a bit higher than Denver at 7500ft so that is a concern.

Not sure about the altitude in Idaho Springs, but if you go there, you could go to the swimming pool and geo thermal caves at Indian Springs. It's really fun and relaxing!
