I haven't tried any of the places in the above link, but Pacific Ocean Mart (grocery with locations in Denver and Broomfield) sells banh mi which is pretty good (their pastries aren't that great, though).

South Federal (between south of 6, and north of Mississippi) is filled with Vietnamese places, ranging from nameless hole in the wall pho joints to restaurants with full menus. You'll find your banh mi in many storefronts there. As a bonus, S. Federal also has hole in the wall taquerias, and a decent dim sum place or two. It's arguably Denver's best ethnic food strip.

Close to South Federal is Alameda Square on W Alameda, also with tons of Asian and particularly Vietnamese places.
