If he's diabetic, he probably would have lost his leg anyway. Generally, if you have diabetes, you can't reverse it with diet. All you can do is slow the progress and effects of the disease.
The American diet contains enough of the nutrients for good health and longevity, but we just eat too damned much, and the nutrition is buried in processed foods and empty calories.
In most cases, raw foods deliver no more nutrition than when they are cooked, and in some cases, cooked foods are actually better for you, because cooking releases minerals which would otherwise remained locked into the foods during digestion. But it's a good idea for doctors to recommend raw foods, because the most nutritious foods CAN be eaten raw. The patient, then, by targeting foods that can be eaten raw, cuts down on his processed foods and empty calories. But if you eat carrots, for example, they are no better for you raw than cooked. So, buy things that you could eat raw if you wanted to, but go ahead and cook them if you prefer them that way.
