I think this question belongs here because it is for diabetics. Does anyone have a suitable and simple recipe for muffins using yogurt (or sour cream, I suppose) that is acceptable in a diabetic diet?
Invest in a good diabetic cookbook or search online, there are literally thousands+ recipes online for all of your dietary needs.
I have on my shelf four diabetic cookbooks. I have already checked those. What I want is not in any of them. I don't think I want to buy another book if someone can help.
I typically use unsweetened applesauce in place of oil when I use a "regular" recipe for muffins (and egg whites instead of eggs). I'm not diabetic, but I have not eated full-fat "regular" muffins in literally decades so I suspect I would find them really heavy and not very good.
I don't know if the applesauce (even unsweetened) would work for diabetics. You might want to post in the Food forum -- I think there are some diabetic people who post there.
1/4 cup flax meal, 1/2 tsp baking powder, 1 egg, pinch of salt, 2 TBS greek yogurt, sweetener (1 TBS of xylitol or Truvia or a shake or two of stevia.)
mix together in a mug and microwave for one- two minutes. (check it after one) pop it out of the mug or grab a spoon.
You can add, a TBS of cocoa and a dash of vanilla for a choco version or add your own ingredients. I like mixed berries in my muffin.
I make the basic version in my 4 cup cup measure adding about 1/4 cup of any shredded cheese. I cook it for about 2 minutes in the measuring cup and the size of the measuring cup makes a nice bun for a hamburger or a breakfast sandwich.
