In the summer we grill veggies. I like to roast them. I also sauté and steam them. I also make lots of soups. This year we are trying to cut our meat consumption by 70% focusing on vegetables, legumes, whole grains like quinoa, farro, brown rice, etc...

The easiest veggie prep I've found doesn't require a video. Buy a steamable bag of frozen veggies. Place in microwave, cook for the time listed on the package. Let stand a couple minutes, then eat.

I do cook veggies in more complicated ways, but in the winter when nothing's in season except cabbage, I use a lot of frozen veggies. Cabbage is okay too though, cut in wedges, drizzled with olive oil, and roasted.

Brussel Sprouts - delicious roasted
Kale - lots of way to prepare
Sweet Potatoes - bake them - YUM!

All Year Seasonal -
Broccoli
Broccolini
Broccoflower
Cabbage
Carrots
Mushrooms
Olives
Parsnips
Potatoes
Snow Peas
Etc...
