I just started my diet yesterday and today I made a very tasty creamy vegetable soup.

Recipe:
1 carton of chicken soup stalk
cut 4 stalks of celery into 1 inch lengths (the veggies don't have to be finely chopped)
1/4 red pepper
1 large tomato
1 large carrot
1 zuccini (about 10 inches long)

(you can add whatever veggies you like)... broccoli, cauliflower, mushrooms, green beans, eggplant, etc.

Chop all your veggies and put them into the soup stalk to heat,
add:
garlic powder to taste
1 cube chicken flavoring (not necessary, but I love the taste it adds)
a few shakes of Lowry's seasoned salt to taste
1/4 tsp savory

Let simmer for 1/2 hour until veggies are soft

Slice off about an inch of cream cheese from an 8oz package (I use low cal), put it into a blender, add 1 tbsp corn starch, and a cup or two of the cooked veggies and broth. Whirl until pureed.

Pour into a different sauce pan and keep pureeing the rest of the veggies/broth until the pot is empty.

Combine, heat and serve. Delish!

I'd suggest looking at the online recipe database for Cooking Light magazine. Thousands of recipes.

There millions of low carb or low cal bloggers & sites, google any recipe you like, & you can find a new way to make it. One of my favorite no guilt meals is to use zoodles, (zuchinni noodles) with an artichoke pesto & add as many veg as you like, & have it with fish or chicken. I use my vegetable peeler to make the noodles. No need to buy another gadget. Just keep peeling the strips off to make thin, but wide noodles.

I had such a gadget. I hated said gadget. I gifted the gadget.

I love wide "noodles." Can you -- pretty please -- tell me what kind of vegetable peeler you have/use? Thanks so much!
